Funnily enough it's usually people who are 30 and over that do shit like that....or yeah, disgruntled employee.
But it's saying that the people who work here are assholes....it's aimed at the collective. If it was an employee the chances are it would be directed at someone in particular, or a group in particular, or it could even have been who was reasonably new to the job who hadn't formed a bond with anyone quite yet. Those all depend on the amount and type of people that work there tho. We don't have that information to continue on that track.
For the lack of information I'd put my money on male 'adult' disgruntled shopper.
Kids would put something that they think is shocking. 'Assholes work here' is an 'adult' thing.
I'd suggest it was the person that took the photo.

a local fast food place with an unusually low-to-the-ground sign once made the mistake of announcing, via the sign, that they needed a new ASSISTANT MANAGER. it was only a matter of minutes before they were advertising for an ASS MANAGER. likewise with a POOL TOURNAMENT that turned quickly into a POO TOURNAMENT. have to admit i laugh at such pranks.

It's play on the old, "If assholes could fly, this place would be an international airport." For sure an employee.
